I love bananas. I think it’s my favourite fruit just because it’s cheap, easy to bring with you, no mess, it tastes great, you can use it in recipes and it fills you up. What’s not to like? Brown skin, yes I hear you. The perfect banana for me is when the peel is perfect yellow, without any brown spots. As soon as it gets spotty, I don’t like them anymore. It’s rare that a banana gets that ripe in my house but the other week it was cheaper to buy a big bundle of them than just two so I did. The other three I used in a banana bread muffin recipe. I have never made banana bread before and as I don’t have the right tin for it, I decided to make banana bread muffins instead. And I added chocolate chips to give it another taste.

I found this banana bread muffin recipe on Love from the Oven and it is super easy and quick. I reckon it took me 30 minutes or so to make from assembling the ingredients to taking the first bite.

Banana Bread Muffin Choc Chip Banana Bread Muffin

Banana Bread Muffin Ingredients

3 ripe bananas
2 dl brown sugar
1 ⅓ dl melted butter
2 eggs
1 tsp vanilla extract
3 ¾ dl flour
½ tsp baking powder
1 tsp baking soda
1 pinch of salt
200g chocolate chips

Banana Bread Muffin Method

  1. Preheat oven to 200˚C
  2. Prepare a muffin pan with 12 muffin liners
  3. In a large bowl, mash bananas until only small chunks remain
  4. Add in melted (and cooled) butter and brown sugar and stir until well combined
  5. Stir in beaten eggs and vanilla and stir until combined
  6. In a separate bowl combine flour, baking soda, baking powder and salt, stir to combine
  7. Combine wet and dry mixture until just combined. Do not over-mix
  8. Add in chocolate chips and stir to combine
  9. Divide batter between 12 muffin cups
  10. Place in oven and immediately reduce the oven temperature to 175˚C
  11. Bake for 20 minutes or until the muffins are turning golden brown. Use a toothpick or similar to check that the centre isn’t sticking to it
  12. Remove from oven and allow to cool for five minutes
  13. Remove muffins from pan and serve
