Tomorrow is Pancake Day but because I’m not in (I’ll be munching away on pancakes at Angelica in Leeds) I made some at the weekend instead. Recently I received a bottle of Chocolate Chai* which I’ve been enjoying in tea but also milk (both recipes included on the back label) but I wanted to try this ingredient in something different to a drink. For Pancake Day I thought it would be cool to make my own chocolate sauce, with Chocolate Chai. If you’re a fan of chai lattes, this is a recipe for you.
Normally I enjoy pancakes whit a bit of sugar and lemon but if you want to go all out, pancake cakes are the best. I went all out over the weekend and made this delicious calorie bomb. If you’re on a diet, I do apologise, not for you! The rest of you, treat yourself! Making a pancake cake is really easy, all you need is pancakes and whatever topping you fancy. I went for vanilla ice cream, banana and chocolate sauce.
The chai taste in the chocolate sauce takes away some of the sweetness so the cake isn’t too sickly. You can also add a bit of lemon juice if still too sweet.
- 3 eggs
- 6 dl milk
- 2.5 dl flour
- butter for frying
Mix half the milk and flour together to a month mix. Add the rest of the milk, eggs and salt whisk together. Let rest for 30 min or so beforehand frying. I like my pancakes thin but this recipe works if you like thick, American style pancakes too.
- 1 dark chocolate bar
- 2 tsp Chocolate Chai
Melt chocolate in bowl over hot water. Leave to cool before adding the Choclate Chai to make sure it doesn’t curdle. Mine did slightly still when spreading on ice cream.
Layer pancakes, ice cream, bananas and chocolate sauce until happy. Slice up and enjoy.
